Stretch a pound of hamburger into Mexican Pizza

Feeding my always hungry son can be a challenge. This recipe was easy to put together I made 5 pizzas and I even ended up with leftovers! One skillet and a cookie sheet is all I needed to get dinner on the table.
The recipe called for Trader Joe brand ingredients but I chose to use the Aldi comparable that were in my pantry. I also used a full pound of hamburger instead of the half pound the recipe called for. One other substitution was my cookie sheet to bake three pizzas at one time instead of a pie tin for each one.
I was totally out of fresh tomatoes and green opinion, so my pizzas had to survive with only black olives and some sour cream for garnish.

Pioneer Woman “The Bread” – The Best

So easy and so good. The Pioneer Woman’s recipe for The Bread is simple but effective. This creation turns out like a wonderful buttery soft crouton. I couldn’t stop eating it!!! My only warning would be to watch the bread while it is in the broiler. It could go very wrong- very quick! I broiled on high, on the middle rack of my oven and it took about 5 minutes, but I kept checking it as if my life depended on it. Try this one!

Oven Tacos are Awesome!!

These were so easy!! Thanks Pinterest for this amazing dinner! I only made a half recipe using one pound of ground beef and ended up with 12 tacos and more filling to spare for leftovers. I froze the other half of my green chilis, tomato sauce and refried beans. We added fresh salsa from SAMs Club, lettuce, sour cream, and olives. I will say one more time. YUM!!!!!

Beef & Broccoli is a success!!

So – SO easy! This recipe was a snap! The only challenge was finding the cooking sherry in the grocery store. Now I am set with that ingredient for a long time. I used some thin cut rib-eye instead of the sirloin because that’s what looked better in the butcher case. I also went with fresh broccoli. I sped the process along by spending some time pre-cutting and mixes all the ingredients so when the wok was hot I was ready to go. This passed the family dinner test with flying colors. Friends even walked in and said my house smelled so good!

Just HAD to try this recipe. Man Pleasing Chicken – one of my recent finds on Pinterest. I am happy to say it passed my chicken hater child. He ate it with no complaints. The cooking sauce was ultra easy. How can you go wrong with 3 ingredients! I didn’t garnish with rosemary as the recipe suggests – only because I HATE rosemary. I was slightly disappointed my creation didn’t get as pretty looking with the browned corners like the picture but the taste was yummy. Tender chicken and super easy!
